Remembrance Day and overcast days call for soup…I think
On these days I feel like comfort food and I think that cream soup fits that bill. This all came together pretty quick.
I sautéed chopped celery and onions in butter, then added the chopped mushrooms with thyme. I simmered that for 5 minutes. Then I added a couple tbsp of flour. I cooked for a few minutes, stirring the whole time. Then I added chicken broth, and scraped the bottom of the pan (that’s where the good flavour bits are) I simmered for 5 minutes. Then I added some cream and turned it to low and let that simmer for 5 minutes. Then I spooned it in to my bowl and devoured it.
It was like a big warm hug.
